(I realize the extreme irony of posting this recipe right after blathering on about being more healthy... but I've been waiting to post it and quite frankly, I just don't care!)
Parmesan French Fries
The world's most delectable french-fry recipe
1 tsp mustard powder
1 tsp salt (more or less, to taste)
1 tbsp olive oil
4-6 medium sized potatoes
1/4-1/2 cup shredded Parmesan cheese
Pre-heat oven to 400 degrees. Using a handy-dandy french fry cutter (or a kitchen knife if you don't have one, but I warn you, you will want one after this), slice the freshly peeled potatoes into thin strips.
Combine fries with olive oil, mustard, and salt in a large bowl and mix until fries are fully coated. Spread the fries evenly on a baking pan (if they clump together too much, they don't bake as well!). Place in the oven and bake for approximately 20-30 minutes. The fries should look golden and crispy. Add the Parmesan at the last possible minute, and bake for 5 more minutes, or until the cheese is lightly toasted.
Serve with dijon mustard for a fun twist!
There's a lot of things you can do with this recipe- I have not tried using frozen fries, but I'm sure that would work as well! Also, you can experiment with the spices to find what tastes best for you, or even add different ones! Enjoy!!!

Yum! I agree, these are pretty healthy. I'm so glad olive oil is good in moderation, because I love it!
